The Sap Is Running

This time of year, the sap in many trees starts running as spring approaches, including the Sugar Maple trees that provide the sweet sap used for maple syrup.  To collect the sap, a tap is inserted past the bark of the tree and the sap flows through the tap into a bucket like the one pictured above.  The sap is then boiled to remove excess water and distill it down to maple syrup.
